The Jabalí Agave (Agave convallis Trel):
Regarded as the most exotic of all Mezcals. Unlike Mezcal made from Tepeztate agave – whose eccentricity lies in its rarity and slow maturation as an endangered plant – the Jabalí agave is a type of wild agave that spreads widely throughout Oaxaca’s Mezcalero belt. Though relatively abundant, there are only a handful of Maestro Mezcaleros who know the secret of selecting and processing this agave to craft Mezcal.

The Jabalí agave is the most difficult to process, as it foams heavily and, due to its lower sugar content, requires three to four distillations. Jabalí means wild boar in Spanish, and the plant owes its name to its sharp, curved leaves resembling boar’s tusks. Stories circulate of Maestro Mezcaleros who harvested entire fields of Jabalí only to end up without a single drop of drinkable Mezcal.
